Package Frozen Sweet Corn (thawed) 1 Cup Grated Parmesan Cheese 1 Cup Shredded Mexican Blend Cheese 1 Cup Sour Cream ¼ Cup Sweet and Spicy Pickled Jalapeno Peppers ¼ Stick Butter 1 ½ Cups Ritz Crackers (crushed) Nonstick Cooking Spray Directions: Preheat oven to 350 degrees. In a medium bowl, add the sweet corn, Parmesan cheese, Mexican blend cheese, sour cream, and sweet and spicy pickled jalapeno peppers. Mix together in the bowl then spoon into a 9-inch pie plate sprayed with nonstick cooking spray. In a small bowl, mix together crushed Ritz crackers and melted butter. Spread over the top of the corn dip. Bake in the oven for 25 to 30 minutes or until the crackers start to brown around the edge. Serve with your favorite crackers!
